When Malcolm and I travel to N. America - that is both Canada and the USA - we have withdrawl symptoms from not being able to find roast potatoes as we do them over here in the UK and indeed in many European Continental countries. We do miss our roast potatoes, so again Joe and Gary it is something to turn your thoughts to given that you are not having much luck on the double Jersey cream front.
So why oh why no roast potatoes over there? They are so simple and so delicious. We simply peel and parboil, then put them in an open roasting tin in a hot oven till they brown. Cook them in beef dripping, lard or olive oil, or simply around a good sized joint of beef, pork or lamb with the fat coming off it. I stress they must not be covered whilst cooking or they do not crisp and brown up.
Sunday just isn't Sunday withour a meat joint to roast and roast potatoes with it, and also some roast parsnips in winter too.
Maybe the answer is simply that you don't do open roasts like we do??? Am I right in thinking that pot raosting and casseroles rule the day over there.
